چکیده

The valorization of red grape pomace is significant as one the most cultivated fruits worldwide and generated by-product quantities are enormous. For this purpose, numerous encapsulation techniques have been developed. However, studies on microemulsions composed with deep eutectic solvent extracts very limited. In study, extract (RGPE) was first prepared by extraction characterized HPLC analysis. Rutin, quercetin, catechin caftaric acid were identified main non-pigment phenolic compounds. RGPE further encapsulated in (MEs) following a low-energy approach using mixture low molecular weight surfactants, pseudo-ternary phase diagram constructed. physical antioxidant stability MEs containing 3–15 wt% investigated for period 30 days. stable at an ambient temperature 25 or 37 °C. radical scavenging activity improved up to 13% compared free extract. Our results indicate that provide protection valuable constituents especially under elevated conditions can therefore be used systems applications nutraceuticals cosmetics.

Copper Electrodeposition from a Water-Containing Choline Chloride Based Deep Eutectic Solvent

This study investigated the effect of water on the physical and electrochemical properties of a choline chloride deep eutectic solvent (DES). Physical and electrochemical measurements were performed on the DES containing varying amounts of water. When the water content was increased from 1% to 15 wt%, the viscosity and density declined while the conductivity increased significantly. Similarly, ...

Influence of Hierarchical Interfacial Assembly on Lipase Stability and Performance in Deep Eutectic Solvent.

Hierarchical systems that integrate nano- and macroscale structural elements can offer enhanced enzyme stability over traditional immobilization methods. Microparticles were synthesized using interfacial assembly of lipase B from Candida antarctica with (CLMP-N) and without (CLMP) nanoparticles around a cross-linked polymeric core, to characterize the influence of the hierarchical assembly on l...

The Effect of Red Grape Pomace Powder Replacement on Physical Characteristics and Acrylamide Content of Biscuit

Background and Objectives: Biscuit is the most popularly consumed bakery item, and due to higher consumption among children, increase of its nutritional value and safety is a necessity. Acrylamide is a potential carcinogen that is formed in carbohydrate-rich food products like biscuits at temperatures above 120oC. Among the various parameters, which affect acrylamide formation, the inhibitory e...

Kinetic Modelling for Flavonoid Recovery from Red Grape (Vitis vinifera) Pomace with Aqueous Lactic Acid

This study was undertaken with the aim of establishing a correlation between the extraction yield in total flavonoids from red grape pomace and the extraction temperature, using 0.5% (w/v) aqueous lactic acid as the solvent system. Extraction of flavonoids was found to obey second-order kinetics, and on such a basis, the yield in total flavonoids at saturation could be very effectively determin...

Physical and Oxidative Stability of Uncoated and Chitosan-Coated Liposomes Containing Grape Seed Extract

Polyphenol-rich grape seed extract (0.1 w/w%) was incorporated in liposomes (1 w/w% soy lecithin) by high pressure homogenization (22,500 psi) and coated with chitosan (0.1 w/w%). Primary liposomes and chitosan-coated secondary liposomes containing grape seed extract showed good physical stability during 98 days of storage. Most of the polyphenols were incorporated in the shell of the liposomes...
